A recipe full of flavors and traditions! Carreteiro rice, or carter rice, has its origins in the south of the country, when merchants crossed the southern region with their loads. They consumed beef jerky, which was easier to preserve and which, together with rice, acted as a tasty dish that satisfied and guaranteed energy for the trip! This carreteiro recipe spread across the country and gained space in our cuisine!

The rice carter recipe that I bring here at TudoReceitas consists of preparing rice with dried meat, onion, garlic, pepper and other seasonings. The ease of preparing this dish pleases and the end result is perfect!

Ingredients for making rice carter with dried meat:

 1 tablespoon of oil

 1 tablespoon of butter

 2 cloves of garlic (chopped)

 ½ chopped onion

 250 grams of desalted, cooked and shredded dried meat

 1 cup of chopped pepperoni

 1 cup of raw parboiled rice

 3 cups of boiling water

 2 tablespoons of chopped green peppers (optional)

 chopped green smell (to taste)

How to make Carreteiro rice with jerky:

The first step in the recipe is to desalt the dried meat. Cut the meat into medium pieces and place in a pan with water, bringing to the fire until it starts to boil. Discard the boiled water and repeat the process 2 more times.

After this process, cook the dried meat with water and black pepper for 25 minutes in the pressure cooker. When the meat is cooked, shred it and set it aside.

In a medium saucepan, heat the oil and saute the onion and garlic. Then add the butter and pepper.

Tip: If you don't want to add the green pepper, try adding 1/2 minced chili pepper without the seeds.

Add the chopped pepperoni and saute a few more minutes, until lightly browned.

At this point, add the rice and shredded beef, mixing well.

Add hot water and season with salt and pepper. Mix everything together and cook over medium heat, until the rice broth is dry.

Tip: This can take about 20 to 22 minutes.

When the rice is cooked, cover the pan and let it sit for at least 5 minutes before serving!
